Pumpkin Rice Krispie Treats

Not only do I love agriculture, but I love to be in the kitchen. School has definitely been kicking my butt this semester, but I still find some time to relax and de-stress in the kitchen. I made these cute pumpkin rice krispie treats today for a club meeting. I saw pictures on Pinterest but couldn’t find a recipe, so I made my own. Enjoy!

Pumpkin Rice Krispie Treats

Ingredients:

3 tablespoons butter or margarine

1 10.5 oz. bag of mini marshmallows

Red and yellow food coloring

6 cups Rice Krispies

~20 Tootsie Rolls, cut in half

In a large sauce pan, melt butter/margarine over low heat. Add marshmallows, stirring constantly until melted. Remove from heat and add food coloring to make a pumpkin orange color (I used 4 drops of red and 3 drops of yellow, but do what works for you. I would suggest starting with a few and adding one or two drops, mixing thoroughly to ensure you don’t end up with the wrong color!). Gently mix in Rice Krispies, coating evenly with marshmallow. Form small balls in a “pumpkin” shape- I used a 2 Tablespoon cookie dough scoop and rounded the Rice Krispies into a ball with my hands. Be sure to wet hands frequently to keep the marshmallow goo from sticking to you. Place pumpkins on a lightly greased baking sheet (or plate, waxed paper, etc). Add Tootsie Roll stems and allow treats to cool. Be sure to store in a sealed container to prevent your treats from becoming stale.

Makes about 3 dozen pumpkins (depending on how large you make yours- I had 35 in my first batch and 42 in my second).

I’m looking forward to incorporating more of my hobbies in with this blog. Agriculture isn’t just all about farming, and this would be a great accompaniment to a lesson on pumpkins!
